LTC The Food Revolution with Jim Mellon and Philip Boigner
23 September 2026
Around $10 trillion in annual market value. Roughly one-third of global greenhouse gas emissions. Yet, food production is one of the world’s largest industries still waiting for its moment of technological disruption.
It was a pleasure to hear from LTC Advisory Board Member Jim Mellon and Dr. Philip Boigner, co-founders of New Agrarian, for a discussion on what that disruption could look like.
Jim and Philip explored how cultivated food, precision fermentation and AI could help produce familiar ingredients more efficiently and closer to where they are needed. From cultivated chicken to oils made through fermentation, their examples showed that this technology is already moving beyond the lab. They also made a compelling case for its potential to strengthen food security and ease pressure on conventional farming as demand grows.
Thank you to Jim and Philip for sharing their insights, and to our members and guests for such a thoughtful discussion. We left feeling optimistic about the future of food and the role technology can play in shaping it.
