Last week in Dubai, LTC hosted an unforgettable evening at Chez Wam: 'Chef’s Table - Dining with Restaurant Creators & Industry Makers’.
Guests joined Chef Hadrien Villedieu for a candid conversation on the journey from concept to creation - exploring everything from inspiration and positioning to menu philosophy, operational realities, and what it takes to build a dining experience in one of the world’s most competitive hospitality markets.
We were also honoured to welcome Michael Ellis, former Global Director of the Michelin Guide and former Chief Culinary Officer at Jumeirah Hotels & Resorts. Drawing from decades of experience dining at and evaluating some of the world’s most celebrated restaurants, Michael shared insights into global dining trends, culinary excellence, and the evolving expectations shaping hospitality worldwide.
The evening went beyond conversation into a truly interactive experience, as guests learned how Michelin-star dishes are judged - from technique and balance to presentation and originality - before tasting and critiquing dishes alongside Michael and hearing directly what he looks for through the eyes of a Michelin inspector.
